  • Blue-Grey Oyster

    The Blue-Greys have a meatier texture than our other species of oyster mushroom, with a slightly woody taste and hints of seafood.

    During early growth these mushrooms boast a deep bluish hue, softening into a striking blue-grey colour as they mature.

  • Pink Oyster

    The Pink Oyster works well as a ham/bacon substitute, pairing well with seafood too.

    These mushrooms are thin and delicate, softening to a peachy colour once cooked.

  • Yellow Oyster

    This vibrantly coloured mushroom is sweeter than our others.

    Hints of almond and cinnamon are rounded off with a citrusy kick. Adapts well to most dishes.

  • King Oyster

    The mighty kings of the oyster mushroom world. Meaty, dense and robust - this species is perfect for creating meals that pack a punch. Can be turned into mushroom steaks, or added into dishes to give them depth.

  • Lion's Mane

    The one everyone’s obsessed with. These shaggy, white mushrooms make great steaks when barbecued whole. Alternatively, rip them into shreds and fry up with oil to create deliciously crispy, bite-sized brain food.
